Crosland and Pappas Properties, developers of Birkdale Village in Huntersville, N.C., a 52-acre
mixed-use development and recent winner of the 2003 Pillars of the Industry
Award, announce the signing of three new restaurant tenants: Red Rocks, Dressler’s
and Le Peep.

Red Rocks, an American theme restaurant, will begin serving lunch and dinner in a new 5,500 sq. ft. restaurant
(its second in Charlotte) beginning in September.

Dresslers, an upscale, steak and seafood, dinner-only restaurant, plans an October opening of its new 5,191 sq. ft.
restaurant.

Le Peep will begin serving breakfast, brunch and lunch in August at its 3,269 sq. ft. restaurant, the second one to
operate in the city of Charlotte.

Jon Dressler, an 18-year veteran of the restaurant industry, and Kim Dressler, an 18-year veteran of the hospitality
industry, are combining their skills and talents to create a restaurant experience
at Birkdale Village that will combine outstanding service and dinner menu created
by an award-winning chef. Dressler’s will have a capacity of 130 diners and
will serve only dinner seven days a week. Jon and Kim will also have space for
20-25 patrons in an adjoining bar. Wine-by-the-glass selection will be about
8-10 offerings with a 60-80 bottle wine list.
